Mondchens Recipe
Ingredients
1/2 pound sweet butter
1 1/4 cups sugar
1/4 teaspoon salt
Grated rind of 1 lemon
1 1/3 cups sifted all-purpose flour
1/2 pound unblanched almonds, ground
1 egg white slightly beaten with
1 teaspoon water
Granulated sugar for sprinkling
Directions
Cream the butter.
Add the sugar, salt, and lemon rind; cream until light.
Add the flour, then the almonds, mixing with a spoon at first, then finish by kneading lightly with your hands.
Chill about 1 hour.
Roll out small portions of the chilled dough at a time on a lightly floured board to 1/8 inch thickness.
Cut with a crescent-shaped cookie cutter.
Place on a lightly greased cookie sheet.
Brush with the egg white and sprinkle lightly with granulated sugar.
Bake in a 350° oven for 12 to 15 minutes, or until a light tan color.
