monai bread pizza Recipe

the uniqueness about this bread pizza is it's main ingredient, a "fried eggplant"! never did i thought that a fried eggplant would taste good on a bread and would even taste better when made into a bread-pizza. as we all know, bread pizza's are very easy to make and compliments all, most especially kids and adults alike. i chose to post this recipe first because of it's easiness in preparation. i hope you'll like it more as much as my family do. happy cooking!

Ingredients

 
3 monai bread (small) or any bread you prefer and cut into small sizes (3''x 3").
 
1 piece eggplant (fat )
 
1/2 cup tomato sauce or paste (thick)
 
1/2 cup shredded mozzarella or cheddar cheese
 
1/2 cup butter
 
1/2 teaspoon salt
 
1/2 teaspoon hot sauce (optional)
 
1/4 cup cooking oil
 
1/4 cup slightly chopped white onions (optional)

Directions

I. slice eggplant in round, thin slices. place sliced eggplant in a bowl of water to prevent discoloration and set aside.
II. slice monai bread or bread of your choice into halves ( like sliced hamburger buns), set aside.
III. heat oil in a pan, fry sliced eggplant until golden brown in color. set aside.
IV. spread butter on the cut side of each bread, sprinkle some salt. heat into oven for 100 deg F. or within bread/cake temperature for about 5-6 minutes or until butter is evenly melted.
V. remove bread from oven. now, spread some tomato sauce/paste on top of each bread overlapping the butter.
VI. place sliced eggplant on top of each bread (overlapping the tomato sauce/paste and butter). spread in again some tomato sauce/paste onto the eggplant.
VII. now, top it with chopped white onions (optional) and shredded mozzarella/cheddar cheese.
VIII. again, put into oven (same temperature as above) for another 3 minutes. best served while still hot and add hot sauce if preferred.
