Mom's Homemade Chicken Recipe
Ingredients
| 2 to 2 1/2 pounds chicken parts | ||
| 3 celery stalks, cut in 1 -inch pieces | ||
| Bay leaves | 2 , crushed | |
| 1 1/2 to 2 teaspoons peppercorns or pepper to taste | ||
| Onion | 1 , sliced | |
| Hot water | 8 Cup (16 tbs) | |
| 2 carrots, shredded (about 1 cup) | ||
| 1 to 1 1/2 cups fine egg noodles | ||
| Salt | 2 Teaspoon | |
Directions
Set Power Select at HIGH.
In 5-quart casserole dish, combine chicken, celery, bay leaves, pepper, onion and water.
Heat, covered, 10 minutes.
Set Power Select at MEDIUM-LOW.
Heat 35 to 37 minutes or until chicken is tender.
Strain broth into 3-quart casserole dish; add carrots, noodles and salt.
Heat, covered, 7 to 8 minutes at MEDIUM-LOW.
Meanwhile, remove chicken from bone.
Add chicken to soup and let stand, covered, 7 to 8 minutes or until noodles are tender.
