Ingredients
1 small onion, finely chopped
4 tablespoons bacon drippings
2 cups white bread crumbs
Milk
1 pound ground beef
1 egg
Salt and pepper to taste
Pinch of ground nutmeg
2 shallots, finely chopped
1 small green bell pepper, finely chopped
1 teaspoon flour
Pinch of thyme
2 drops Tabasco sauce
1 (10 ounce) can tomato soup
1/2 soup can water
Directions
Brown the onion in 2 tablespoons of the bacon drippings in a skillet over medium heat.
Soften the bread crumbs in a small amount of milk.
Combine the onion, bread crumb mixture, ground beef, egg, salt, pepper and nutmeg in a large bowl and mix well.
Shape into 8 balls.
Brown the meatballs in the remaining 2 tablespoons bacon drippings.
Add the shallots and cook over medium low heat for 4 minutes.
Add the green pepper and flour, and cook for 10 minutes longer.
Arrange the meatballs in a large skillet over medium heat.
Combine the thyme, Tabasco sauce, soup and water in a medium bowl and whisk to blend.
Pour the soup mixture over the meatballs.
Simmer, covered, for 15 minutes or until meat is cooked through.
