Mom's Pumpkin Cookies Recipe
Ingredients
1 cup packed brown sugar
1 cup granulated sugar
3/4 cup shortening
2 cups canned pumpkin
1 egg
3 1/2 cups flour
1 teaspoon salt
1/2 teaspoon allspice
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon cinnamon
Canned frosting
Directions
Combine the brown sugar, granulated sugar, shortening and pumpkin in a large mixing bowl; cream until light and fluffy.
Beat in the egg.
Mix together the flour, salt, allspice, baking soda, baking powder and cinnamon in a separate bowl.
Add the flour mixture to the creamed mixture gradually, beating well after each addition.
Drop by teaspoonfuls 2 inches apart onto a greased cookie sheet.
Bake at 375 degrees for 10 minutes or until done to taste.
Frost the cooled cookies with canned frosting.
