Mom's Gingerbread Cookies Recipe
Ingredients
1 cup (2 sticks) margarine
2 cups sugar
1 egg
1/2 cup molasses
2 cups quick cooking oats
2 cups flour
1/2 teaspoon salt
2 teaspoons ginger
2 teaspoons cinnamon
2 teaspoons baking soda
Directions
Cream the margarine and sugar in a mixing bowl until light and fluffy.
Beat in the egg and molasses.
Add a mixture of the oats, flour, salt, ginger, cinnamon and baking soda; mix well.
Drop by teaspoonfuls 2 inches apart onto a greased cookie sheet.
Bake at 375 degrees for 10 to 12 minutes or until done to taste.
