Ingredients

 
2 envelopes unflavored gelatin
 
1/2 cup cold water
 
1 cup mayonnaise
 
1/2 cup half and half
 
1 tablespoon sugar
 
1/2 teaspoon salt
 
Juice of 1 lemon
 
1 can salmon, drained and flaked
 
1/2 cup chopped celery
 
2 teaspoons minced onion
 
Salad greens
 
Pimiento strips

Directions

Soften gelatin in cold water; place over hot water until gelatin is dissolved.
Combine mayonnaise and half and half; stir until smooth.
Add sugar, salt, and lemon juice.
Stir gelatin into mixture.
Add salmon, celery, and onion to mayonnaise mixture.
Pour into ring mold; chill until firm.
Unmold on salad greens and garnish with pimiento strips.
