Cottage Cheese Pineapple Salad Recipe
I love cheese and I love fruits and this Molded Cottage Cheese Pineapple Salad is a mix of both! Truly delicious, the Molded Cottage Cheese Pineapple Salad tops my list of favorites.
Ingredients
1 pkg. lemon gelatin
2 c. boiling water
1 c. whipped cream
1 1/2 c. cottage cheese
1 pkg. lime gelatin
1 c. pineapple juice
1 c. chopped pineapple
1/3 c. stuffed olives, sliced
1/3 c. broken walnuts
Directions
Dissolve lemon gelatin in 1 cup boiling water; cool slightly.
Beat with egg beater until light; add cream and cottage cheese.
Pour into round mold.
Chill until firm.
Dissolve lime gelatin in remaining water and pineapple juice; cool.
Add pineapple, olives and walnuts.
Pour over firm layer.
Chill until firm.
