Molded Cheese Dessert Recipe
This molded cheese dessert is a gelatin dessert prepared with pot cheese or cottage cheese. Flavored with coffee, vanilla and bay leaves, the molded cheese dessert is refreshing and best garnished with mint. I serve this dessert on hot summer days.
Ingredients
| 2 envelopes unflavored gelatin | ||
| Cold water | 1 Cup (16 tbs) | |
| 1 cup double-strength coffee | ||
| 1 pound pot cheese or low fat cottage cheese | ||
| Vanilla extract | 1 Teaspoon | |
| Sugar | 1/4 Cup (16 tbs) | |
| 2 bay leaves, broken in half | ||
| Mint leaves or watercress | ||
Directions
Sprinkle gelatin over cold water in a small skillet; let stand 5 minutes.
Heat, stirring occasionally, over low heat until dissolved (about 3 minutes).
Pour gelatin mixture into a food processor or blender; add remaining ingredients except bay leaves and mint.
Puree mixture.
Spoon mixture into a 1 quart mold.
Push bay leaf pieces into mixture.
Refrigerate covered 4 to 6 hours; unmold.
Garnish with mint.
