Molded Lettuce Recipe
Ingredients
1 head iceberg or other crisp lettuce
1/2 medium green pepper, diced fine
1/2 medium red pepper, diced fine
2 teaspoons dehydrated onion flakes, reconstituted in 2 tablespoons water
1 garlic clove, mashed well, or garlic powder
2 recipes Mayonnaise Sauce (count 1 tablespoon mayonnaise and 1 fluid ounce evaporated skimmed milk per serving)
Watercress or parsley sprigs
Salt and freshly ground pepper
Pimento strips
Directions
Shred lettuce fine to make 3-4 cups, tightly packed.
Add green and red peppers, onion flakes, garlic and freshly made Mayonnaise Sauce.
Mix well.
Pack mixture into mold and refrigerate.
Serve on platter with border of watercress or parsley sprigs.
Garnish top of mold with strips of pimento.
Pass salt and pepper mill at the table.
