Molded Cottage Cheese And Spinach Salad Recipe
Ingredients
| Spinach leaves | 1 Quart, lightly packed | |
| 3 hard-cooked eggs, peeled and diced | ||
| Cottage cheese | 1 1/2 Cup (16 tbs) | |
| 1 medium-size sweet green pepper, cored, seeded, and minced | ||
| Celery | 1/2 Cup (16 tbs), minced | |
| Mayonnaise | 1/2 Cup (16 tbs) | |
| Salt | 1 1/4 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
Directions
Mix all ingredients and pack into a lightly oiled 5-cup ring mold.
Cover and chill 3-4 hours.
Unmold and garnish, if you like, with tomato wedges and parsley or watercress sprigs.
