Ingredients

 
1 cup butter, softened
 
1/2 cup honey
 
1 1/2 teaspoons almond extract
 
1 cup whole wheat pastry flour
 
1 cup unbleached white flour
 
1 cup ground almonds

Directions

In a large bowl, beat butter until fluffy.
Beat in honey and almond extract.
Sift together whole wheat pastry flour and unbleached white flour into a medium-size bowl.
Stir in almonds.
Mix thoroughly into butter mixture.
Chill until firm, about 1 hour.
Preheat oven to 300 °F.
Divide dough into pieces, and roll them into logs about 1/2 inch thick.
Cut into 2 1/2-inch lengths.
Taper ends with fingers, and bend into half-moon shapes.
Place about 1/2 inch apart on ungreased baking sheets, and bake on middle shelf of oven for 20 to 25 minutes, or until lightly browned.
Cool on wire racks.
