Moulded Coconut Pineapple Salad Recipe
Ingredients
| Pineapple package | 1 | |
| Salt | 1/2 Teaspoon | |
| Lemon juice | 2 Tablespoon | |
| Ground ginger | 1/8 Teaspoon | |
| Pineapple tidbits | 1 Can (10oz), drained | |
| Green pepper | 1/4 Cup (16 tbs), chopped | |
| Flaked coconut | 1/4 Cup (16 tbs) | |
| 1 tablespoon chopped green onions | ||
Directions
Prepare gelatin according to directions on package.
Add salt, lemon juice and ginger.
Chill until slightly thickened.
Fold in remaining ingredients, except greens, and spoon into 1-quart mold.
Chill 3 hours, or until firm.
Unmold on platter and garnish with greens.
Makes 4 servings.
