Ingredients

 
1 20-ounce can pitted tart red cherries (water pack)
 
2 envelopes (2 tablespoons) unflavored gelatin
 
Non-caloric liquid sweetener to equal
 
3/4 cup sugar
 
5 drops red food coloring
 
1/2 cup lemon juice
 
1/4 cup chopped celery

Directions

Drain cherries, reserving juice; add enough water to juice to make 3 cups.
Soften gelatin in juice mixture; stir over medium heat till gelatin is dissolved.
Add sweetener, food coloring, and cherries; bring just to boiling.
Remove from heat; add lemon juice.
Chill till partially set, stirring occasionally.
Fold in celery.
Pour into 5 1/2 cup ring mold.
Chill till firm
