Roasted Molasses Sweet Potatoes Recipe Video
Ingredients
# 1/2 cup orange juice
# 1/4 tsp nutmeg
# 3 tbsp molasses
# 5 medium sweet potatoes, peeled and sliced into 1/2" slices
# 2 tbsp olive oil
# 1/4 tsp salt
# 1/4 tsp black pepper
# 2 tbsp butter
Directions
# Preheat your oven to 400°.
# In the small bowl combine the orange juice, nutmeg and the molasses. Set the mixture aside.
# In the large bowl toss the sweet potatoes with the olive oil, salt and pepper. Make sure to coat the potatoes evenly
# Spread the potatoes on the baking sheet in a single layer.
# Roast the potatoes for 15 minutes
# Turn the potatoes over and then brush with half of the orange juice mixture.
# Return the potatoes to the oven and continue roasting for another 7 to 10 minutes, or until they are tender when pierced with a fork.
# Meanwhile, in the small saucepan, combine the remaining orange juice mixture and the butter. Whisk over medium to high heat for about ten minutes, until the mixture thickens,
# Transfer the sweet potatoes to a large serving dish and toss with the butter and orange juice glaze.
