Molasses Macaroons Recipe
Ingredients
| Sugar | 1 Cup (16 tbs) | |

| Butter | 2 Tablespoon, softened | |
| 1/4 cup light molasses | ||
| Egg | 1 | |
| Flour | 2 Cup (16 tbs) | |
| Baking soda | 1 Teaspoon | |
| Cinnamon | 1 Teaspoon | |
| Ground ginger | 1 Teaspoon | |
| Ground cloves | 1/4 Teaspoon | |
| Flaked coconut | 1/2 Cup (16 tbs) | |
Directions
1. Preheat oven to 350°F. Place 1/4 cup sugar in a shallow dish. In a large bowl, beat butter and remaining 3/4 cup sugar with an electric mixer on medium speed until well blended. Beat in molasses and egg until light and fluffy.
2. Beat in flour mixed with baking soda, cinnamon, ginger, and doves until dough is smooth, scraping down side of bowl frequently with a rubber spatula. Fold in coconut.
3. Drop dough by heaping teaspoonfuls into dish of sugar and toss gently to coat. Place 2 inches apart onto lightly greased cookie sheets.
4. Bake 10 to 12 minutes, or until golden brown. Let cookies cool 2 minutes on sheets, then remove to racks and let cool completely. Store in a rightly covered container.
