Mock Sausage Recipe
Ingredients
Dried Lima beans- 1 cup or Cooked beans of any kind- 3 cups
Bread-crumbs- 2/3 cup
Eggs- 3
Fat- 2 tablespoons
Sage- 1/2 teaspoon
Salt and pepper- to taste
Directions
GETTING READY
1.Start by picking over and washing the beans
2.In a bowl, cover beans with water and let soak overnight
MAKING
3.Next day, drain the beans
4.In a boiler, cook beans in boiling salted water until tender, then force through a strainer
5.Now add remaining ingredients, shape into the form of sausages, roll in crumbs, egg, and crumbs again
6.In a pan, saute until brown
SERVING
7.Serve with milk, egg, or any cheese dish

This recipe makes six to eight sausages, three inches long and three fourths of an inch thick.
