Ingredients

 
2 tbsp (30 mL) butter
 
2 tbsp (30 mL) flour
 
1/2 tsp (2 mL) salt
 
1 cup (250 mL) milk
 
2 egg yolks, lightly beaten
 
2 tbsp (30 mL) fresh lemon juice
 
Grated rind of 1/2 a lemon
 
2 tbsp (30 mL) margarine or butter

Directions

Place the butter in a 4-cup (1 L) microwave-safe measuring cup, and melt 1 minute at HIGH.
Add the flour, mix well.
Add the salt and the milk.
Stir and microwave 3 minutes at HIGH, stirring once after 2 minutes of cooking.
When sauce is creamy, stir in the egg yolks.
Beat until well blended.
Add the lemon juice and rind.
Mix well.
Microwave 1 minute at HIGH.
Beat and cook another 30 seconds.
Add the margarine or butter.
Taste for seasoning.
Stir until the butter is melted.
Serve.
