Mock Fried Chicken Recipe
Ingredients
1 21/2-to 3-pound frying chicken, cut into serving pieces
1 teaspoon salt
1/4 teaspoon pepper
2 large onions, sliced into rings
1/2 cup water
Directions
Put chicken pieces skin-side-down into a large, heavy skillet.
Sprinkle chicken with salt and pepper; put onion slices on top.
Cover skillet; cook chicken over low heat 30 minutes.
Tilt lid of skillet slightly to allow liquid to evaporate as it continues to cook slowly another 20 minutes.
Chicken will be tender and golden.
Remove chicken to a heated platter.
Put onions back in open skillet with the water.
Stir together for several minutes, until onions darken and absorb the liquid.
Spoon this over chicken; serve.
