Mock Apple Pie Recipe

Ingredients

| Round crackers | 36 | |
| Water | 2 Cup (32 tbs) | |
| Sugar | 2 Cup (32 tbs) | |
| Cream of tartar | 2 Teaspoon | |
| Lemon juice | 2 Tablespoon | |
| Lemon | 1 | |
| Butter/Margarine | 1 Tablespoon | |
| Ground cinnamon | 1 Teaspoon |
Directions
MAKING
1) Roll out the pastry to fit a 9 inch pie dish
2) Using a roll pin, break the crackers coarsely and spread onto the base of the pastry
3) In a saucepan mix together the water, sugar, cream of tartar in a saucepan and boil for about 15 minutes
4) Add in the lemon juice and the rind and pour the syrup over the crackers
5) Dot the dish with butter and sprinkle in some cinnamon
6) Cover the pie dish with the remaining pie crust to covet the top
7) Seal the edges and trim off the edges
8) Using a sharp knife, make vents on the top to allow the steam to escape
9) Bake in the oven at 425F for 35 minutes till the crust to crisp and golden
SERVING
10) Serve the pie war with some ice cream or custard
