Ingredients

1 half-ripe pawpaw (just turning ripe —

slightly yellow) and about 11/2Ibs. in weight

2 large lemons

6 cloves

1 dssrtspn. Maizena

sugar

water

Directions

Peel pawpaw and cut into pieces 1" wide lengthwise.
Remove all seeds and scrape until quite clean.
With a sharp knife cut these pieces very thinly to resemble sliced apple.
Take a large cup and for each cupful of sliced fruit take 3/4-cup cold water and 1/4-cup sugar.
Put all ingredients into an enamel sauce- pan with the 6 cloves.
Place over medium heat and stir well until it begins to boil, remove spoon and close the saucepan, simmering for 10 minutes.
Stir off and on, until the fruit is tender when pierced.
Add strained lemon juice mixed with 1 dssrtspn.
Maizena.
Stir for a few minutes; remove from stove and allow to cool and thicken.
Roll out your favourite pastry recipe and line a flan tin.
Bake in a hot oven and cool.
Remove any skin from top of cooked pawpaw mixture, beat up lightly with a fork and fill pastry case.
Cover lightly with well-whipped cream, or serve with cold custard.
