Mock Apple Butter Recipe
Ingredients
Zucchini
4 tablespoons vinegar
1 teaspoon lemon juice
2 cups sugar
1 teaspoon cinnamon
Dash of allspice
2 drops red food coloring
Directions
Peel, seed and coarsely chop enough zucchini to make 4 heaping cups.
Combine the zucchini and vinegar in a blender and process until smooth.
Combine the zucchini puree, lemon juice, sugar, cinnamon, allspice and food coloring in a heavy saucepan over medium low heat.
Cook until mixture is of desired thickness, stirring occasionally.
Cool and keep in the refrigerator, or seal in hot canning jars.
