Mock Tuna Salad Recipe
Ingredients
| Soy protein | 1 1/2 Cup (16 tbs) | |
| Warm water | 2/3 Cup (16 tbs) | |
| Carrots | 2 , grated | |
| Celery stalks | 3 , finely chopped | |
| Parsley | 2 Tablespoon, finely chopped | |
| Scallion | 2 Tablespoon, finely chopped | |
| Firm tofu | 1 pound, drained | |
| Eggless mayonnaise | 1 1/2 Cup (16 tbs) | |
| Tamari soy sauce | 1 1/2 Tablespoon | |
| Prepared mustard | 1 Tablespoon | |
| Lemon juice | 1 Teaspoon | |
| Salt | To Taste | |
| Pepper | To Taste |
Directions
Combine TVP and warm water in a large bowl. Add carrots, celery, parsley and scallion. Mix well. Crumble in tofu.
In a small bowl, mix together the eggless mayonnaise, tamari or soy sauce, mustard, lemon juice and salt and pepper. Add to large bowl. Mix thoroughly.
Refrigerate at least 1 hour.
