Ingredients

 Soy protein1 1/2 Cup (16 tbs)
 Warm water2/3 Cup (16 tbs)
 Carrots2 , grated
 Celery stalks3 , finely chopped
 Parsley2 Tablespoon, finely chopped
 Scallion2 Tablespoon, finely chopped
 Firm tofu1 pound, drained
 Eggless mayonnaise1 1/2 Cup (16 tbs)
 Tamari soy sauce1 1/2 Tablespoon
 Prepared mustard1 Tablespoon
 Lemon juice1 Teaspoon
 Salt To Taste
 Pepper To Taste

Directions

Combine TVP and warm water in a large bowl. Add carrots, celery, parsley and scallion. Mix well. Crumble in tofu.
In a small bowl, mix together the eggless mayonnaise, tamari or soy sauce, mustard, lemon juice and salt and pepper. Add to large bowl. Mix thoroughly.
Refrigerate at least 1 hour.
