Mock Kalua Roast Recipe

Ingredients
2 5-lb. pork shoulder roasts (or fresh ham)
4 tbs. salad oil
1 garlic clove, minced
4 tbs. salt
Ti or banana leaves (corn husks or foil)
Directions
Mix the minced garlic with salad oil and rub roasts with mixture.
Wrap meat in leaves, then in foil, securing seams tightly.
Roast at 350° F.for four hours.
Uncover meat and brown surface in hot oven, 450° F.or in broiler just before serving.
Mock Kalua Roast should be cut into individual serving portions and eaten sprinkled with Hawaiian salt (or ice cream salt).
