Mock Hollandcrise Sauce Recipe
Ingredients
2 tbsp (30 ml) butter
2 tbsp (30 ml) flour
1 cup (250 ml) milk
Salt and pepper
1 egg yolk
1 tbsp (15 ml) butter
2 tbsp (30 ml) lemon juice
Directions
– In a saucepan, melt butter and add flour. Stir and cook for 1 minute. Add milk, stir and cook for 4 minutes. Season with salt and pepper.
– In a small bowl, beat egg yolk, then add small amount of hot sauce and stir. Add mixture to sauce and cook for 2 minutes. Remove from heat and add butter and lemon juice.
