Mocha Walnut Frosted Recipe

mocha walnut frosted muffins are awesome little bakes made with a brew of strong coffee cold coffee along with cocoa and walnuts. A warm and delightful bake, this muffin recipe is best enjoyed fresh from the oven with a tall glass of warm frothed milk.

Ingredients

 
1/2 cup softened butter or margarine 125 mL
 
1 cup granulated sugar 250 mL
 
2 cups all-purpose flour 500 mL
 
3 tsp baking powder 15 mL
 
1/4 tsp salt lmL
 
1/2 cup cold strong coffee 125 mL
 
3/4 cup chopped walnuts 175 mL
 
3 egg whites, stiffly beaten
 
FROSTING:
 
3 tbsp softened butter 45 mL
 
1 cup icing sugar 250 mL
 
1 tbsp powdered cocoa 15 mL
 
2 tbsp strong coffee 25 mL

Directions

In a large bowl, cream butter thoroughly.
Add sugar gradually, beating well.
In another bowl, mix together flour, baking pow- der and salt.
Add to creamed mixture alternately with coffee.
Stir thoroughly until well blended.
Add chopped walnuts.
Fold in egg whites.
Spoon batter into prepared muffin tin, filling cups two-thirds full.
Bake in preheated oven for 25 minutes.
In a bowl cream together butter and 2 tbsp (25 mL) icing sugar.
Add coffee, remaining icing and cocoa.
Beat until light and fluffy.
Spread over cooled muffins.
NOTE: To make icing with a smooth glazed surface, use liquid hot.
