Mocha Whip Recipe
Ingredients
| Gelatin | 1 Tablespoon | |
| Cold water | 2 Tablespoon | |
| 1/2 cup very strong coffee | ||
| Eggs | 3 , separated | |
| Sugar | 1/2 Cup (16 tbs) | |
| Salt | 1 Pinch | |
| Vanilla | 2 Teaspoon | |
| Cream | ||
Directions
Soften gelatin in the cold water for 5 minutes, then set in hot water to dissolve.
Make the strong coffee by adding 6 tablespoons medium grind coffee to 1 cup boiling water and heat just to boiling.
Then turn off heat, cover and allow to stand 3 minutes; strain through several thicknesses of cheesecloth and cool slightly.
Beat the egg yolks in the top of a double boiler, then beat in the sugar and salt.
Add the 1/2 cup coffee and cook over hot water until the mixture coats a spoon.
Add vanilla and gelatin; blend well.
Fold in stiffly beaten egg whites.
Pour into 4-cup glass mold or into smaller individual glass ones.
Chill until firm.
When ready to serve, unmold and serve with cream.
Makes 4 cups.
