Ingredients

 125 g / 4 oz butter, chopped
 90 g / 3 oz dark chocolate, broken into pieces
 2 tablespoons instant coffee powder
 2 1/2 cups / 315 g / 10 oz flour
 1/2 cup / 45 g / 1 1/2 oz cocoa powder
 Baking powder1 Teaspoon
 2 eggs, lightly beaten
 1 cup / 250 g / 8 oz caster sugar
 1 cup / 170 g / 5 1/2 oz brown sugar
 Vanilla essence2 Teaspoon
 125 g / 4 oz pecans, chopped

Directions

1. Place butter, chocolate and coffee powder in a heatproof bowl set over a saucepan of simmering water and heat, stirring, until mixture is smooth. Remove bowl from pan and set aside to cool slightly.
2. Sift together flour, cocoa powder and baking powder into a bowl. Add eggs, caster sugar, brown sugar, vanilla essence and chocolate mixture and mix well to combine. Stir in pecans.
3. Drop tablespoons of mixture onto greased baking trays and bake at 180°C/350°F/ Gas 4 for 12 minutes or until puffed. Stand cookies on trays for 2 minutes before transferring to wire racks to cool.
