Mocha Mounds Recipe

Ingredients
1 env. unflavored gelatin
2 tsp cold water
1 1/4 cup strong boiling coffee
1 oz. sq. bitter chocolate, melted
1 tsp liquid sugar replacement
3 egg whites, beaten stiff
8 tsp low-calorie whipped topping, prepared
Directions
Sprinkle gelatin over cold water in mixing bowl; set aside 10 minutes to soften.
Add boiling coffee and stir to completely dissolve gelatin.
Stir in melted chocolate and sugar replacement until completely blended.
Cool mixture to consistency of unbeaten egg whites.
With electric beater, beat mocha mixture until frothy.
Fold stiffly beaten egg whites into the mixture.
Spoon into 8 serving dishes; refrigerate until set.
Before serving, top with 1 tsp (15 mL) topping.
