Mixed Seafood Kabobs Recipe

Ingredients
1 8-ounce fresh or frozen lobster tail
8 ounces fresh or frozen halibut fillets or steaks cut 1/2 inch thick
3/4 pound fresh or frozen shrimp in shells
8 sea scallops
8 medium mushroom caps
1/3 cup margarine or butter
2 tablespoons lemon juice Lemon wedges (optional)
Directions
Thaw lobster, fish, and shrimp, if frozen.
Remove shell from lobster; cut meat into 12 chunks.
Cut halibut into 12 chunks, about the same size as the lobster chunks.
Peel and devein shrimp.
Rinse scallops and pat dry.
On six 12-inch skewers, alternately thread lobster chunks, halibut chunks, shrimp, scallops, and mushroom caps.
For lemon sauce, in a small saucepan melt margarine.
Stir in lemon juice.
Brush on kabobs.
Lightly grease the cooking grill.
Place kabobs on the cooking grill.
Grill 8 to 10 minutes or till fish and seafood are opaque and cooked through, turning once and brushing with the lemon sauce halfway through grilling time.
