Ingredients
3 sprigs fresh basil
3 sprigs fresh tarragon
6 sprigs fresh thyme
1 quart vinegar
Directions
Wash herbs; arrange in a sterilized wide mouthed jar.
Bruise leaves and stems, using a wooden spoon.
Bring vinegar to a boil; pour over herbs in jar.
Cover with a metal lid, and screw band right.
Let stand 10 days at room temperature; shake jar daily.
Strain vinegar through 4 layers of cheesecloth into a decorative bottle; discard herbs.
Seal with a cork or other airtight lid.
Use mixed herb vinegar in sauces and salad dressings.
