Selection of salad greens (lettuce, curly endive, spinach, green shallots, parsley and watercress)
 
1 cucumber
 
2 clove garlic, crushed
 
4-5 tablespoons olive oil
 
Freshly ground black pepper
 
8 slices french bread, quartered
 
Vinaigrette dressing

Directions

Rinse, dry and chill salad greens. Tear into bite-size pieces. Peel cucumber leaving a little green color on the flesh. Cut in half lengthwise and scoop out seeds with a spoon. Cut into 5cm lengths. Heat garlic in a frying pan with olive oil and a good grinding of black pepper. Mix well then toss with quartered slices of french bread. Place in moderate oven 180C (350F) and toast until just turning golden. Cool on crumpled kitchen paper. Add to bowl with salad greens and cucumber and, just before serving, toss with vinaigrette dressing
