Ingredients

 1/2 pound calf's brains
 Water2 Cup (16 tbs)
 1 1/2 teaspoons vinegar or lemon juice

 Beef liver1/2 pound, sliced
 1/4 to 1/2 inch thick

 Eggs3 , Well beaten
 Shortening2 Tablespoon, melted
 Frying Oil2 Cup (16 tbs) (For frying)
 6 artichoke hearts (canned in water), drained
 2 zucchini, washed and cut crosswise in 1 inch slices
 3 stalks celery, cut in 3 inch pieces

Directions

Wash brains in cold water.
Combine with 2 cups water, vinegar, and 1/2 teaspoon salt in a saucepan.
Bring to boiling, reduce heat, and simmer gently 20 minutes.
Drain the brains and drop into cold water.
Drain again and remove membranes.
Separate into small pieces and set aside.
Combine 1/4 cup flour, 1/2 teaspoon salt, and pinch pepper.
Coat the liver with the flour mixture, cut into serving-size pieces, and set aside.
Combine 2 cups flour with 1 teaspoon salt and 1/4 teaspoon pepper; set aside.
Combine milk, eggs, and shortening.
Gradually add the flour mixture to the liquid, beating until smooth.
Fill a deep saucepan one half to two thirds full with oil.
Heat slowly to 360°F.
Dip pieces of meat and the vegetables in the batter and fry in hot oil, being careful not to crowd the pieces.
Fry about 5 minutes, or until golden brown, turning occasionally.
Hold cooked pieces over the hot oil to drain before placing on paper towels.
Place on a warm platter and serve immediately.
