Mixed Vegetables Recipe

This mixed vegetables recipe sprang up as a result of my diet. I just wanted something healthy but never knew it would be this tasty. Hope you will give this a try!

Ingredients

 
1/4 pound broccoli
 
1/4 pound string beans
 
1/4 pound cabbage
 
1/4 pound fresh mushrooms
 
1 large onion
 
1 garlic clove
 
3 tablespoons oil
 
1/2 teaspoon salt
 
1/2 cup stock
 
1 tablespoon soy sauce

Directions

1. Break broccoli into flowerets and parboil. Cut string beans in l inch sections and parboil separately.
2. Dice cabbage, mushrooms and onion. Crush garlic.
3. Heat oil. Add salt, then garlic, and stir-fry a few times. Add onion, cabbage and string beans; stir-fry 2 minutes.
4. Add broccoli and mushrooms; stir-fry 2 minutes more. Add stock and soy sauce, and heat quickly. Then cook, covered, 2 to 3 minutes over medium heat
