Mix veg rice can be made in a jiffy and in many different ways. Its a good way to use all the left over vegetables and is a very healthy meal too. Pressure cooking reduces time and effort even more.

Ingredients

 Rice1 Cup (16 tbs)
 Mixed vegetables1⁄2 Cup (8 tbs)
 Chopped coriander leaves2 Tablespoon (Leveled)
 Oil1 Tablespoon
 Turmeric powder1 Teaspoon
 Chilli powder1 Teaspoon
 Garam masala1 Teaspoon
 Coriander powder1 Teaspoon
 Ginger garlic paste2 Teaspoon
 Salt1 Teaspoon

Directions

MAKING
1. Put oil in a hot cooker and fry the ginger garlic paste.
2. When the raw smell goes saute all the vegetables for 3-4 minutes.
3. Next add the rice and all the spice powders. Mix Well.
4. Add 2 cups water and cook till 2 whistles.

SERVING
5. Serve hot with a raita or chutney of your choice.
