Directions

GETTING READY:
1. Preheat oven to 450 degrees Fahrenheit
2. Chop 3 cloves of garlic.
3. Grate 8 ounces of Gruyere cheese, 8 ounces of Parmesan cheese and 4 ounces of Fontina cheese into a bowl.

MAKING:
4. For the mushroom sauce: Heat 6 tablespoons of olive oil in a pan.
5. Sauté the 3 chopped garlic cloves in the pan.
6. Add 1 teaspoon of basil, 1 teaspoon rosemary, 2 tablespoons of red wine, a dash of salt and pepper to the pan and simmer.
7. Add 1 pound of mixed mushrooms like Shitake mushrooms, baby bella, and white button mushrooms to the pan, mix and let it cook down.
8. Add 6 ounces of truffle butter or regular butter and stir.
9. Add 3 tablespoons of flour to the sauce and let it thicken.
10. For the Pizza dough: Knead 2 ¼ tablespoons Dry yeast , ¾ cup warm water, 2 tablespoons olive oil, 1 tablespoon Honey, Sea salt- 1 teaspoon and 2 cups of all purpose flour and set aside for 30 minutes.
10. Roll out the dough and place on a baking tray.
11. Pour the mushroom sauce over the pizza base.
12. Put a generous portion of the mixed grated cheese over the top.
13. Pop the tray into the oven for 12-15 minutes.

SERVING:
14. Let the pizza cool for 2 minutes and use a pizza cutter to cut into slices and dig in.
