 2 bulbs shallots, minced

 Zest of 1 lemon
 1 tablespoon wild blackberry honey
 1 ounce Honey Ridge Farms Balsamic Honey Vinegar
 Juice of 1 lemon
 Dijon Mustard1 Tablespoon (Lemon Honey-Thyme Vinaigrette Ingredients:)
 Salt To Taste
 Pepper To Taste

Directions

Combine greens with onion rings. Top with cheddar shavings and fresh ground pepper, to taste. Serve with Honey-Lemon Vinaigrette and sliced grilled peaches with toasted pecans, drizzled with blackberry honey.

Lemon Honey-Thyme Vinaigrette Directions:

Combine oil with the minced garlic, shallots, lemon-thyme, zest and honey. Slowly steep mixture on a low heat for 30 minutes; allow to cool. Blend together vinegar, lemon juice and mustard; slowly add to this the infused oil until emulsified. Season with salt and pepper. Tip: This vinaigrette is great for dressing baby greens, grilled foods, potato and slaw salads.
