Mixed Fruit Salad Recipe
Mixed fruit salad is a fresh minted fruit salad. Made with a medley of fruits, the salad is dressed with yogurt flavored with orange juice, rind and honey. Chilled and tossed to serve, this salad is juicy and sweet.
Ingredients
| 1 medium size cantaloupe, halved, seeded, sliced 1/4 inch thick, and peeled | ||
| 2 medium size navel oranges, peeled and cut into 1/2 inch cubes | ||
| 2 medium size bananas, peeled, sliced, and sprinkled with 2 teaspoons lemon juice to prevent darkening | ||
| Strawberries | 1 Cup (16 tbs), sliced | |
| Seedless green grapes | 1 Cup (16 tbs) | |
| Low fat plain yogurt | 3/4 Cup (16 tbs) | |
| Orange juice | 1/3 Cup (16 tbs) | |
| Honey | 1 Tablespoon | |
| Orange rind | 1 1/2 Teaspoon, grated | |
| Mint | 1 Tablespoon, minced | |
Directions
Arrange the cantaloupe, oranges, bananas, strawberries, and grapes attractively on a large platter.
Cover with plastic wrap and chill in the refrigerator until ready to serve.
In a small bowl, whisk together the yogurt, orange juice, honey, orange rind, and if you like, the mint.
Transfer to a small pitcher and chill until ready to serve.
At serving time, pass the dressing separately.
