Mixed Fruit Salad Recipe

Mixed fruit salad is a fresh minted fruit salad. Made with a medley of fruits, the salad is dressed with yogurt flavored with orange juice, rind and honey. Chilled and tossed to serve, this salad is juicy and sweet.

Ingredients

 
1 medium size cantaloupe, halved, seeded, sliced 1/4 inch thick, and peeled
 
2 medium size navel oranges, peeled and cut into 1/2 inch cubes
 
2 medium size bananas, peeled, sliced, and sprinkled with 2 teaspoons lemon juice to prevent darkening
 
1 cup sliced strawberries
 
1 cup seedless green grapes
 
3/4 cup plain low fat yogurt
 
1/3 cup orange juice
 
1 tablespoon honey
 
1 1/2 teaspoons grated orange rind
 
1 tablespoon minced fresh mint

Directions

Arrange the cantaloupe, oranges, bananas, strawberries, and grapes attractively on a large platter.
Cover with plastic wrap and chill in the refrigerator until ready to serve.
In a small bowl, whisk together the yogurt, orange juice, honey, orange rind, and if you like, the mint.
Transfer to a small pitcher and chill until ready to serve.
At serving time, pass the dressing separately.
