Mixed Fruit Chutney Recipe
Ingredients
| Dried apricots | 225 Gram | |
| Dates | 225 Gram | |
| Apples | 350 Gram, peeled | |
| Onion | 1 Medium, skinned | |
| Bananas | 225 Gram, peeled | |
| Dark brown sugar | 225 Gram | |
| Grated rind and juice of I lemon | ||
| Mixed spice | 5 Milliliter | |
| Ground ginger | 5 Milliliter | |
| Curry powder | 5 Milliliter | |
| Salt | 5 Milliliter | |
| Cider vinegar | 450 Milliliter | |
Directions
1. Finely chop or mince the apricots, dates, apple and onion, or chop them in a food processor.
2. Put all the ingredients into a 2.8 litre (5 pint) ovenproof glass howl and mix them together well.
3. Three-quarters cover with cling film and microwave on HIGH for 30-35 minutes until the mixture is thick and all the liquid has been absorbed. Stir frequently during the cooking time, taking particular care to stir more frequently during the last 10 minutes.
4. Pot and cover in the usual way. Store the chutney in a cool, dry, airy cupboard for at least 2 months before using.
