Ingredients

 
8 ounces whole wheat lasagna noodles
 
1 cup part-skim ricotta cheese
 
1 3/4 cups low-fat cottage cheese
 
1/4 cup grated Parmesan cheese
 
1/4 cup wheat germ
 
2 eggs, beaten
 
1 cup cooked cauliflower or broccoli florets, sliced
 
2 cups Tomato Sauce

Directions

Bring a large pot of water to a boil and cook the lasagna noodles until al dente, about 10 to 12 minutes.
Drain and rinse under cold water to cool.
Spread out flat until ready to use.
In a medium-size bowl, combine the ricotta cheese, cottage cheese, Parmesan, wheat germ, and eggs.
To assemble the lasagna, layer one-third of the noodles on the bottom of a 9 X 13-inch baking dish coated with no-stick spray.
Spread with half the cheese mixture.
Top with 1/2 cup of cooked vegetables and 1/2 cup of tomato sauce.
Top with another third of the noodles.
Repeat the layering with remaining cheese mixture, vegetables, and another 1/2 cup of tomato sauce.
Top with the remaining noodles, then spoon the rest of the tomato sauce over the noodles.
Bake, covered, at 375° for 20 minutes.
Uncover and bake an additional 20 minutes.
Remove from oven and wait 10 to 15 minutes before serving.
