Ingredients

 Extra virgin olive oil1 Tablespoon
 Onion1 , finely chopped
 Garlic2 Clove (5gm), crushed
 Green pepper1 To taste, finely chopped
 Pepper red1 To taste, finely chopped
 2.5 cm cube fresh ginger, grated
 Tomato Paste3 Tablespoon
 400 g tin chopped tomatoes
 400 g tin kidney beans, drained
 400 g tin butter beans, drained
 400 g tin chickpeas, drained
 Fresh parsley or coriander, to serve

Directions

In a large pan, heat the oil and add the onion.
Cook for a few minutes, then add the garlic.
Add the peppers and cook for a few more minutes, adding a little more oil if needed.
Add the ginger, tomato paste and tomatoes.
Mix in well for 1 minute before adding all the beans and chickpeas.
Simmer for a few minutes so everything is warm.
Serve sprinkled with parsley or coriander.
