Ingredients
| Extra virgin olive oil | 1 Tablespoon | |
| Onion | 1 , finely chopped | |
| Garlic | 2 Clove (5gm), crushed | |
| Green pepper | 1 To taste, finely chopped | |
| Pepper red | 1 To taste, finely chopped | |
| 2.5 cm cube fresh ginger, grated | ||
| Tomato Paste | 3 Tablespoon | |
| 400 g tin chopped tomatoes | ||
| 400 g tin kidney beans, drained | ||
| 400 g tin butter beans, drained | ||
| 400 g tin chickpeas, drained | ||
| Fresh parsley or coriander, to serve | ||
Directions
In a large pan, heat the oil and add the onion.
Cook for a few minutes, then add the garlic.
Add the peppers and cook for a few more minutes, adding a little more oil if needed.
Add the ginger, tomato paste and tomatoes.
Mix in well for 1 minute before adding all the beans and chickpeas.
Simmer for a few minutes so everything is warm.
Serve sprinkled with parsley or coriander.
