Mix Vegetable Pulao Recipe
Ingredients
| Cauliflower | 1 Kilogram | |
| Salt | 2 Teaspoon | |
| Ginger paste | 1/2 Tablespoon | |
| Onion | 3 , thinly sliced | |
| Pepper corns, 10 | ||
| Mace | 1/4 Teaspoon (Coarsely powdered garam masala :) | |
| Onion | 1 , grated (Coarsely powdered garam masala :) | |
| Cashewnut | 1/2 Cup (16 tbs), halved (Coarsely powdered garam masala :) | |
| Raisins | 1/4 Cup (16 tbs) (Coarsely powdered garam masala :) | |
| Basmati rice | 1 1/2 Cup (16 tbs) (Coarsely powdered garam masala :) | |
| Ghee, 4 to 5 tablespoons | ||
| Cardamoms | 6 (Coarsely powdered garam masala :) | |
| Cinnamon pieces | 3 (Coarsely powdered garam masala :) | |
Directions
Wash and dry rice on cloth.
Cut vegetables into big pieces and boil them.
Finely grate one onion.
Add ginger and salt.
Heat three tablespoons ghee in a pan and fry sliced onion till brown.
Drain and set aside.
To the same ghee add remaining ghee and fry garam masala, cashewnuts and raisins.
When nuts turn light brown, add rice and toss.
Add vegetables and onion paste.
Add only sufficient water to cook rice.
Cover with a lid containing water and cook rice on low fire.
If necessary, add more warm water from the lid. (After frying, the rice can be cooked in pressure cooker).
