Mirepoix Of Vegetables Recipe
Ingredients
| Garlic | 2 Clove (5gm), crushed | |
| Celery | 1 Cup (16 tbs), diced | |
| Carrot | 1 Cup (16 tbs), diced | |
| 2 cups chopped yellow onion | ||
| Peanut oil | 1 Teaspoon | |
| Herb | 2 Teaspoon | |
| Dry sherry | 2 Ounce | |
Directions
Saute the garlic, celery, carrot, and onion in the oil for a few minutes.
Add the Herb Blend, and saute until the vegetables are not quite tender.
Deglaze the pan by adding the sherry and stirring it about with a wooden spoon until the brown glaze formed on the bottom of the pan is liquefied.
Cool, and refrigerate.
