Minute Steaks With Mushrooms Recipe
Ingredients
2 teaspoons sunflower oil
40 g/1 1/2 oz butter
4 minute steaks
175 g/6 oz button mushrooms, thinly sliced
2 tablespoons soured cream
1 tablespoon lemon juice
2 teaspoons snipped chives
2 teaspoons chopped fresh parsley
Directions
Heat the oil and half the butter in a large frying pan.
When the foam subsides, add the steaks and cook over a moderately high heat for 2 minutes on each side for medium steak, or a little longer for well done steak.
Transfer the steaks to a heated serving dish and keep hot while preparing the sauce.
Heat the remaining butter in the pan and add the mushrooms.
Reduce the heat and cook, stirring, for a few minutes until the mushrooms begin to soften.
Stir in the soured cream and lemon juice, then spoon the mushrooms and their juices over the steaks.
Sprinkle with the herbs and serve immediately.
