Minute Lamb Minestrone Recipe
Ingredients
| Cooked | 1 1/2 Cup (16 tbs) | |
| Frozen vegetable mix package | 1 , seasoned | |
| 4 1/2 cups reduced-sodium beef broth or | ||
| 4 1/2 cups water plus 1 tablespoon beef bouillon granules | ||
| Whole tomatoes | 1 Can (10oz), diced | |
| Tomato Paste | 3 Tablespoon | |
| Kidney beans | 1 Can (10oz), drained | |
| 1 teaspoon Italian seasoning Pesto (optional) | ||
Directions
MAKING
1. In a large saucepan, bring mixture of pasta/vegetable mix and beef broth to a boil.
2. Lowering the heat, cover and let it simmer for 5 minutes.
3. Stirring in tomatoes, tomato paste, kidney beans, Italian seasoning and lamb, bring to a boil and cook for 1 minute to heat through.
SERVING
4. Serve with an optional dollop of pesto for garnish.
