Minute Lamb Minestrone Recipe
|Cooked american lamb||8 Ounce, cut in small (1 1/2 Cups)|
|Seasoned frozen pasta and vegetable mix||16 Ounce (1 Package)|
|Reduced sodium beef broth||4 1⁄2 Cup (72 tbs)|
|Water||4 1⁄2 Cup (72 tbs)|
|Diced tomatoes/Whole tomatoes||14 1⁄2 Ounce (1 Can)|
|Tomato paste||3 Tablespoon|
|Canned kidney beans||8 3⁄4 Ounce, drained (1 Can)|
|Italian seasoning pesto||1 Teaspoon|

1. In a large saucepan, bring mixture of pasta/vegetable mix and beef broth to a boil.
2. Lowering the heat, cover and let it simmer for 5 minutes.
3. Stirring in tomatoes, tomato paste, kidney beans, Italian seasoning and lamb, bring to a boil and cook for 1 minute to heat through.
4. Serve with an optional dollop of pesto for garnish.
