Minty Rice Recipe
I found out a great way to use Rice by making some delicious Minty Rice. It is an ideal Main Dish. Use the freshest of Rice available to get a flavorful Minty Rice. Trust me and whip this dish now.
Ingredients
3 tbsp (50 raL) butter or margarine
1 onion, peeled and thinly sliced
1 cup (250 mL) brown rice
2 1/2 cups (625 mL) chicken consomme
1/4 cup (60 mL) fresh mint leaves, chopped
1/4 cup (60 mL) parsley, chopped
3/4 cup (190 mL) natural yogurt
Salt and pepper to taste
Directions
Place the butter in an 8-cup (2 L) microwave-safe dish and melt 1 minute at HIGH.
Add the onion, stir until well coated with the butter.
Microwave 2 minutes at HIGH, stir.
Add the brown rice, chicken consomme, mint and parsley.
Cover and microwave 45 to 50 minutes at MEDIUM-LOW.
When cooked, add the yogurt, salt and pepper to taste.
Stir with a fork.
Serve.
