Minty Pasta with Pea Recipe Video

This is one of my favorite QuickBites. I just love the pop of the peas combined with the refreshing flavor of the mint and the creamy cottage cheese. This dish works especially well in the Spring, but it's so easy to make that I find myself going to it all year round!

 Frozen peas10 Ounce
 Low fat cottage cheese2 Cup (32 tbs)
 Fresh mint1 Cup (16 tbs), chopped
 Extra virgin olive oil2 Tablespoon
 Salt To Taste
 Pepper To Taste

Directions

1) Allow peas to thaw a bit on your counter while you
prep the rest of the dish.
2) Cook pasta according to package. Drain them over
your peas to allow for a quick cook.
3) Mix pasta, peas, mint, cottage cheese and season
with salt and pepper.
4) Drizzle your olive oil over the top and enjoy!
