Minted Picnic Loaf Recipe
This minted picnic loaf is prepard with minced beef, mined sausage and breadcrumbs. Mixed together with potatoes, milk and tomato sauce, the minted picnic loaf is topped with parmesan cheese, breadcrumbs and fresh mint before baking to a beautiful golden brown. Adapted from Sharp Microwave and Convection Cookbook.
Ingredients
2 cups stale breadcrumbs
1/2 cup milk
1 large potato, grated
500 g sausage mince
500 g minced beef
1/2 cup tomato sauce
2 tablespoons chopped fresh mint
TOPPING 1 cup grated fresh parmesan cheese
1 cup stale breadcrumbs
1 tablespoon chopped fresh mint
Directions
1.
Combine breadcrumbs and milk in medium bowl; stand for 5 minutes.
2.
Add potato, mince, tomato sauce and mint to breadcrumb mixture; mix well.
3.
Press mixture into a 13cm x 24cm loaf tin.
4.
Cook for 30 minutes on LOW MIX/BAKE 180°C.
5.
Drain excess liquid from tin.
TOPPING 1.
Combine topping ingredients and press evenly over loaf.
Bake for a further 10 minutes on LOW MIX/BAKE 180°C or until topping is golden brown.

Stand loaf for 15 minutes before turning out.
Serve hot or cold.
