Ingredients

 Croutons1 1/2 Cup (16 tbs)
 Olive oil6 Tablespoon
 Cherry tomatoes3 Cup (16 tbs), halved
 Cucumbers3 Cup (16 tbs), peeled
 Radishes1/2 Cup (16 tbs), sliced
 1 tablespoon mint flakes, crumbled
 Dried chives1 Tablespoon
 Salt1 1/2 Teaspoon
 Ground black pepper1/8 Teaspoon
 Lemon juice1 1/2 Teaspoon
 1/2 teaspoon finely grated lemon rind

Directions

Combine croutons with oil. Toss until well coated.
Set aside.
Combine remaining ingredients in salad bowl.
Add croutons; toss gently.
Serve with lamb or beef.
