Minted Mixed Vegetable Salad Recipe
Ingredients
| Croutons | 1 1/2 Cup (16 tbs) | |
| Olive oil | 6 Tablespoon | |
| Cherry tomatoes | 3 Cup (16 tbs), halved | |
| Cucumbers | 3 Cup (16 tbs), peeled | |
| Radishes | 1/2 Cup (16 tbs), sliced | |
| 1 tablespoon mint flakes, crumbled | ||
| Dried chives | 1 Tablespoon | |
| Salt | 1 1/2 Teaspoon | |
| Ground black pepper | 1/8 Teaspoon | |
| Lemon juice | 1 1/2 Teaspoon | |
| 1/2 teaspoon finely grated lemon rind | ||
Directions
Combine croutons with oil. Toss until well coated.
Set aside.
Combine remaining ingredients in salad bowl.
Add croutons; toss gently.
Serve with lamb or beef.
