Minted Chicken And Pasta Salad Recipe
Ingredients
| 3 tablespoons mint apple jelly | ||
| Mayonnaise | 1/4 Cup (16 tbs) | |
| Cider vinegar | 2 Tablespoon | |
| 1 to 2 tablespoons chopped fresh mint,or 1 to 2 teaspoonsdried mint flakes | ||
| Salt | 1/2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| 8 ounces small pasta,cooked, drained | ||
| Cooked chicken | 2 Cup (16 tbs), chopped | |
| Yellow bell pepper | 1 To taste, cut into pieces | |
| Cucumber | 1 Cup (16 tbs), chopped | |
| Green onions | 1/4 Cup (16 tbs), sliced | |
Directions
Place the jelly in a microwave-safe bowl.
Microwave, uncovered, on High for 20 to 30 seconds or until melted; cool slightly.
Add the mayonnaise, vinegar, mint, salt and pepper and blend well.
Combine the pasta, chicken, bell pepper, cucumber and green onions in a salad bowl.
Add the mint jelly mixture and toss to coat.
Chill, covered, for at least 1 hour before serving.
